Ingredients

  • ½ Avocado
  • 100g Rocket Salad
  • 75g Chick peas
  • 5 Cherry Tomato’s
  • 5 Olives
  • ½ Zucchini
  • ½ Sweet Potato
  • 1 Egg
  • 1 Chopped Scallion
  • 2 tbsp Flour
  • 1 tbsp Coconut Oil

Directions

  1. Shred Zucchini and Sweet Potato, place in a bowl with egg and flour
  2. Place oil in in a fry pan and create circle shapes of the mix and cook until golden brown
  3. Place all other ingredients in a bowl and serve
